
At Celler Pardas we have spent the last 20 years tending to and selecting old Sumoll vines across half of Catalonia, crafting Collita Roja and our Sumoll Rosat from vineyards in northern Alt Penedès and the Anoia river basin. And after many massal selections, we have gradually grafted our vines on the Can Comas estate.
With Sus Scrofa, it is entirely our doing: the choice of location, the soil type, the orientation, the rootstock, the vine selection, the training and pruning methods... always with the least possible tillage and a reasoned, organic viticulture.
With a delicate harvest and winemaking, and without any type of aging, the intention is to offer a Sumoll wine that is as natural, direct, and honest as possible. The result is a celebration of a wine, pure fruit. We have done a lot of work, now you enjoy it.

In all the vineyards cultivated to produce Sus Scrofa, no herbicides, insecticides, or synthetic products are used. We practice no-till farming: we do not plow the soil and work with spontaneous cover crops to protect it.
100% hand-harvested on August 31 and September 1-2, 2023. 20 kg plastic crates. Extremely rigorous selection in the vineyard and at the winery.
100% whole cluster. Spontaneous fermentation. Maceration: 12 days at 22ºC. The wine has been neither stabilized nor fined.
5 months in 3000-liter foudres.
