MOTIVATION

After a long history of making aged still wines, in 2018 at Celler Pardas we began an exciting project of sparkling wines, also designed for long aging and longevity over time. In doing so, we take a step forward in our creativity and professional challenge, engaging and connecting with a tradition deeply rooted in our homeland.

It has been a spontaneous process. Our own trajectory has led us here in an opportune, heartfelt, and natural way.

CORPINNAT

Who could resist the temptation to rethink and value our limestone territory through the prism of a sparkling wine?

Everything, our entire philosophy—ultimately what Pardas stands for in still wines—will also be found in our sparkling wines under the Corpinnat collective brand, featuring one of the most demanding regulations in the wine-producing world.

Time is relative, subjective to the narrative we create. In wine, however, we find a tangible measure.

The aged Xarel·lo and Sumoll wines that we love so much will also serve as the core varieties to express our sparkling wines.
 Organic-based viticulture and winemaking with spontaneous fermentations are the tools chosen this time to achieve minimum intervention sparkling wines.

All of our sparkling wines are produced as vintage Brut Nature.

We embark on this adventure with renewed strength, with the exciting memory of our first vintage still vivid, and with our standards completely intact. Once again, the goal has been to create something with strong personality and authenticity to survive the continuous tsunami of passing trends.

Identity is born in the vineyard, language in the cellar.
REQUIREMENTS
OUR OWN PARTICULAR DECALOGUE

100% ESTATE-VINIFIED

Probably one of the most important points among our requirements. All the wine made in our cellar comes from our own vineyards. (Corpinnat does not allow the purchase of base wine to produce our sparkling wines. The purchase of grapes from growers is permitted, but buying wine is not).

The Corpinnat territory for growing and production, as the name suggests, is located at the epicenter of Penedès. We thus emphasize that the personality of a sparkling wine lies in its origin (terroir, climate, varieties, and tradition), completely dismissing the idea that a sparkling wine is merely a production method with a second fermentation in the bottle.

Only traditional varieties may be used to produce Corpinnat wines. We enjoy a rich viticultural heritage with a very distinctive personality. We firmly believe that our traditional grapes are the best transmitters of our limestone terroirs' personality and are better adapted to our climate than international varieties. For Pardas sparkling wines within Corpinnat, the chosen varieties are Xarel·lo and Sumoll.

Organic farming is indispensable.

We believe this is an essential requirement for obtaining quality wines. The human ability to select grapes at harvest cannot currently be matched by any machine. And this fact has a direct impact on the final quality of the wine.

The Corpinnat collective brand makes a clear commitment to long aging, with a mandatory minimum of 18 months of bottle aging. Giving the wine time in the bottle brings complexity and a fine, well-integrated bubble that allows one to sensorially explore the heart of the wine. This is the core concept. In the case of Pardas, our Corpinnat sparkling wines undergo a minimum bottle aging of 30-40 months before release.

Even though Pardas is 100% estate-grown and everything we vinify is cultivated on our land, this is a point we value greatly. We are farmers by profession and vocation. In Corpinnat, we ensure a fair price for the grapes through stable 3-year contracts with grape growers. Now more than ever, a minimum guaranteed price is vital for the grower's economic sustainability.
