
All of Pardas' white wines have always been directly pressed. Pell a Pell is the exception. It is a skin-contact white wine (Brisat), fermented and macerated with its skins. Skin-contact wines have never been part of the mainstream wines in our region, but they do form part of our winemaking tradition. In times past, skin-contact wines were also present in our farmhouses (masies). Its production could not be more elemental. Whole grapes into the vat. A person inside treading the grapes with their feet and packing the vat until it is full. Covered during fermentation without any intervention, and once finished, bled off without pressing. Another expression of the Xarel·lo variety.

In all the vineyards cultivated to produce Pell a Pell, no herbicides, insecticides, or synthetic products are used. We practice no-till farming: we do not plow the soil and work with spontaneous cover crops to protect it.
100% hand-harvested on August 19, 2022. 20 kg plastic crates.
Elemental and spartan winemaking. Grapes are trodden by foot with a person inside the vat. Once full, the vat is closed until fermentation finishes, lasting 12 days. Spontaneous fermentation with estate yeasts. Malolactic fermentation. Pressed with a vertical basket press. Total maceration time: 15 days.
5 and a half months in stainless steel tanks. Unfined.
